65cal Strawberry Pretzel Jello


1/8 slice= 65 calories, 4.5g protein

Crust:
1 1/4 C Fiber One (Original)
1/8 C Splenda (Any sugar substitute)
1/2 C Water
Optional- 1 tsp Salt

2/3 C Vanilla Greek Yogurt
1/2 C Cool Whip, Free
4 oz Fat Free Cream Cheese (softened) 
1/2 C Splenda
2 C Strawberries
Sprinkle of Sugar Free Vanilla Dry Pudding Mix


Steps:
1.  Preheat oven to 375.
2. Grind DRY crust ingredients in a food processor.
3.  Add water and mix.  Press onto the bottom of any pan of your choice (I suggest nothing bigger than 8 x 8 x 2).
4.  Place in oven and cook for 20-25 min. or until golden brown.
5.  Let cool (room temp, fridge, or freezer).
6.  Mix together yogurt, cool whip, cream cheese and splenda.  Add on top of crust once the crust is cool enough.
7.  Cut up strawberries and place on top.  Sprinkle the pudding mix over the strawberries.
*If you want more of a "jello" substance for the strawberry top layer, you'll need to buy strawberry gelatin and follow the box directions.
8.  Cut into 8 equal slices and enjoy!
