Entire meal= 300 calories, 28g protein
1 90 calorie Flat Out Wrap
1/2C Refried Beans
2 ounces Ground Turkey
3 tbsp Reduced Fat Shredded Cheese
4 tbsp Salsa
1/2 tbsp Light Sour Cream
1 tbsp Plain Greek Yogurt
Jalepenos
Taco seasoning
Steps:
1. Cut flat out wrap in half longways.
2. Spread about 1 tbsp of refried beans down the edge of one half, and do the same to the other half.
3. Prepare your ground turkey by heating on a skillet for about 10 minutes or until browned. Add taco seasoning to your liking.
4. Spread 1 ounce on top of the refried beans of the flat wrap, and another ounce on top of the refried beans of the other half of the flat wrap.
5. Fold both halves of the flat wrap over, add 2 tbsp of salsa to each enchilada. Then add 1 tbsp of shredded cheese to each enchilada.
6. Place enchiladas in the microwave for about 15-20 seconds (until the cheese melts).
7. Top with jalepenos and serve with sour cream/greek yogurt mixture (next step).
8. Mix the sour cream and greek yogurt together and you've got yourself a lighter/more protein filled sour cream :)
9. I used the remaining refried beans and cheese as a little side dish.
