Entire pizza= 200 calories, 20g protien
You will need a food processor/blender for this recipe!
Crust:
1 C Cauliflower
1/8 C Water
1/4 C Egg Whites
Salt/Pepper to taste
Sprinkle Oregano
(Due to the fact that this crust is "Skinny" and made with cauliflower, don't expect it to have the exact same texture as flour. I still have to use a fork to eat this pizza, but, I promise it is worth it!)
Toppings:
1/8- 1/4 C Pizza Sauce (depending on how you like it!)
1/8 C Reduced Fat Mozzarella Cheese
1/8 C Feta
1/2 C Spinach
1/8 C Red Onion
12 or less slices of Turkey Pepperoni
1 sliced Roma Tomato
Steps:
1. Preheat oven to 425.
2. Grind cauliflower in a blender or food processor. Place in a microwave safe bowl, add water, and mix. Cover with plastic wrap, make a few small holes, and microwave for 5 minutes on high.
3. When it is done cooking, you'll have to dry it out as much as possible (there will be more water than you think) on a paper towel. I scoop the cauliflower onto the paper towel and press until the towel is soaked. You might need to do this twice. Once finished, put back into bowl.
4. Add egg and mix.
5. Line baking sheet with wax paper and spread mix onto it in a circular shape (or, whatever shape!). Add spices and bake for 25 minutes. The edges should be brown if not burnt.
6. Lower heat to 350.
7. Add toppings to the pizza (I listed the ingredients in the order by which I place them).
8. Place back in the oven for another 10-15 minutes (check on it).
9. Take out and top with a little bit of parmesan cheese and red pepper flakes!
