Stir Fry:
4oz Chicken Breast (cut into chunks)
1/2 C Broccoli
1/4 Zucchini
1/4 Summer Squash
1tbsp Soy Sauce
1tbsp General Taos Seasoning Packet
Rice:
1 C Cauliflower
1 tsp Garlic
1/8 C Chopped White Onion
Salt and pepper as desired
Steps:
1. Make your sauce by combining the soy sauce with the seasoning packet. Set aside.
2. Grind cauliflower in food processor.
3. Heat a skillet with cooking spray, garlic, and white onion. Let these ingredients simmer for about 1 minute.
4. Add the cauliflower and heat for about 2 minutes. Add salt and pepper as desired.
5. Set aside (on plate/bowl that you will be eating from).
6. Keep skillet hot so you can cook your chicken (you may need to add some cooking spray). Cook chicken until brown on all sides.
7. Add your vegetables and cook for about 1-2 minutes.
8. Add your sauce and cook for about 1-2 minutes.
9. Turn off burner and add this mix on top of your cauliflower rice.
