Rice/Chicken/Bean Mix:
1/2 C Cauliflower
2 oz Canned Chicken or Rotisserie Chicken
1 tbsp Black Beans
1 tbsp Great Northern Beans
1 tbsp Sweet Corn
1 tsp Taco Seasoning
Toppings:
2 tbsp Reduced Fat Mozzarella Cheese
1 tbsp Colby Jack Cheese
1/4 C Shredded Lettuce
1/8 C Diced Tomatoes
1/8 C Diced Red Onion
5-8 Jalepenos
2 tbsp Light Sour Cream
2 tbsp Salsa
Burrito:
1 90 calorie Flat Out Wrap
Steps:
1. Grind cauliflower in food processor.
2. Mix the ground cauliflower with the chicken and add taco seasoning. Heat up either in microwave or on a pan (with a little bit of cooking spray) for about 2-3 minutes.
3. Mix in the beans and corn.
4. Place your wrap on a large plate and add all toppings except for the cheese. I start with the sour cream and salsa on the bottom.
5. Add the Rice/Chicken/Bean mix (make sure it's still hot/warm), then top with cheese (cheese should melt a little bit!).
6. Wrap up like a burrito, cut in half, and enjoy!
